Introducing Bill McIlwraith, our executive chef.  Having grown up in the kitchen experimenting with savoury flavours and letting Moroccan influence spice up his cuisine, Bill brings his Scottish heritage to the Marquis, providing comfort and warmth in all of his cooking.  Bill has been cooking professionally for almost 20 years and says cooking puts him “in a better place of mind.”   If his food is any indication, it’s not hard to believe!  Stop by to try Bill’s signature dish, the apple pork loin!
